Here’s a great quick lunch idea! It has veggies, fruit, healthy fats, and lots of protein!
This recipe was adapted from here:
- baby spinach
- 1 clementine
- dried fruit (I used craisins with pomegranate)
- sliced almonds
Directions: Combine cooked quinoa with baby spinach and a chopped clementine. Then, top with dried fruit and sliced almonds.
I didn’t measure out the ingredients, just tossed in what I wanted. See the original recipe if you want exact amounts.
