Here’s a neat way to make pizza that is not only tasty, but much healthier.
- 1 eggplant
- pizza sauce
- cheese (I used Daiya mozzarella)
Preheat oven to 425F. Line a cookie sheet with foil.
Slice the eggplant into about 1/2 inch round slices and layout on the cookie sheet.
Grease the tops lightly with vegetable oil. Bake for about 10 minutes.
Flip each eggplant slice over, grease the tops, and bake about an additional 10 minutes.
Top each eggplant slice with sauce and daiya cheese. Bake for about 5 minutes, or until cheese has melted.
This makes plenty of pizza to eat for leftovers tomorrow!
These were very quick and easy to make. And of course you can always add additional toppings!
